The nerdiest day of my life
I feel like this photo might need some explanation.
Remember how my family raises homing pigeons? Well it turns out that along with racing pigeons people also breed hundreds of kinds of fancy breeds, and they meet for big competitions.
Think of it like a dog show, but instead of golden retrievers and Rottweilers, there are cages and cages of different pigeons.
Cages and cages and cages and cages and cages.
This year the National Pigeon Association's grand national show (the Westminster dog show of the pigeon world) took place in Vancouver.
Here's the rundown on the event: Three days, 3,500 birds from 200 species. For free.
There was no way I'd miss this.
So I dragged Katie from bed this morning, threw her in the car and drove her to Vancouver where I forced her to feign excitment at the sight of hundreds of near-identical birds.
The convention center was packed with cages, spilling into several side rooms. There were birds of every size, every shape, every color.
Unfortunately, my camera is currently in the shop getting fixed, but Katie's fancy phone took some great photos of some of the day's stranger sights.
Here's a few of the specimens that were on display this afternoon.

And a lot of other strange pigeons
Next year's grand national show is in Oklahoma, but there are smaller local shows throughout the year. With any luck I'll be able to pack up the car and drag Katie across the state.
(NOTE: My secret goal is to eventually convince Katie that pigeons are cool so she will let me have a few dozen. My thinking is that if I can find a breed she likes we can build a loft, stock it with some pretty ones and then she won't mind if I sneak in one or two or 50 racing pigeons of my own).
I know. It's the perfect plan.

Time lapse....
Yikes....it's been a while. I would like to say that I'll be better about this from now on, but I doubt it.
Especially since our camera has now broken. *tear*

I ran in two 5K races this summer! This is me and some Vernier gal's after the Race for the Cure.

Our good friends Alek and Ashley got married in October
I went Kayaking with some of my co workers
and....we went to Black Butte last week and took some walks in the freezing cold. We're still smiling though.

Packy's birthday
Katie and I went to the Oregon Zoo on Saturday with my family to celebrate Packy's 50th birthday.

A St Patty's Day Celebration
My family, being of Irish heritage, always has a St Patty's Day celebration/ get together. This year was no different. My family is used to me always bringing a cheesecake, and while I was tempted at first to make a green colored cheesecake I resisted that urge and tried something new.
Guinness with a Chocolate Gnoche filling Cupcakes
with a Bailey's Irish Cream Frosting

I would like to point out that nothing about these photos have been edited.....they really do just look that good.
Ok, I'll stop with the cupcake pictures. I just couldn't resist. They all looked so good.
Pretty much all of the food was either green or Irish themed. Of course we always have corned beef and hash. I LOVE corned beef. Maybe that is because I only eat it the one time a year, but regardless I love it and look forward to my family get together every year so that I can have it.
It was also really nice because all of my brothers and sisters were there. We haven't all been together in the same room at the same time since Christmas, so that is kinda a big deal.
This is what a family get together of mine looks like. Lots of people, sitting around, and enjoying each others company. It's a novel thing these days it seems.
I would like to add a special thank you to my Aunt Caron for the use of her house, even though they weren't here. They were off on like a month long vacation in New Zealand? I think?
I adapted the recipe from 2 recipes so I kinda picked a chose what I wanted to do. Enjoy!
I will note that this is technically an Irish Car Bomb cupcake, but for family purposes I left out the whiskey.
Guinness Chocolate Cupcakes
For the Cupcakes:
1 cup Guinness stout
1 cup unsalted butter, at room temperature
¾ cup Dutch-process cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
1½ teaspoons baking soda
¾ teaspoons salt
2 eggs
2/3 cup sour cream
1 cup Guinness stout

For the Chocolate Ganache Filling:
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, at room temperature

2 tablespoons butter, at room temperature
For the Baileys Frosting:
2 cups unsalted butter, at room temperature
5 cups powdered sugar
6 tablespoons Baileys Irish Cream
2 cups unsalted butter, at room temperature
5 cups powdered sugar
6 tablespoons Baileys Irish Cream
1. To Make the Cupcakes: Preheat oven to 350 degrees F. Line 24 cupcake cups with liners. Bring the Guinness and butter to a simmer in a heavy, medium saucepan over medium heat. Remove from heat!!!! (This is very important. I learned that the hard way and had to start over because one recipe did not explain that) Add the cocoa powder and whisk until the mixture is smooth. Cool slightly.
2. Whisk the flour, sugar, baking soda and salt in a large bowl to combine. Using an electric mixer, beat the eggs and sour cream on medium speed until combined. Add the Guinness-chocolate mixture to the egg mixture and beat just to combine. Reduce the speed to low, add the flour mixture and beat briefly. Using a rubber spatula, fold the batter until completely combined. Divide the batter among the cupcake liners. Bake until a thin knife inserted into the center comes out clean, about 17 minutes. Cool the cupcakes on a rack.
3. To Make the Chocolate Ganache Filling: Finely chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then, using a rubber spatula, stir it from the center outward until smooth. Add the butter and stir until combined. Let the ganache cool until thick but still soft enough to be piped.
4. To Fill the Cupcakes: Using a 1-inch round cookie cutter (or the bottom of a large decorating tip), cut the centers out of the cooled cupcakes, going about two-thirds of the way down. Transfer the ganache to a piping back with a wide tip and fill the holes in each cupcake to the top.
5. To Make the Baileys Frosting: Using the whisk attachment of a stand mixer, whip the butter on medium-high speed for 5 minutes, scraping the sides of the bowl occasionally. Reduce the speed to medium-low and gradually add the powdered sugar until all of it is incorporated. Add the Baileys, increase the speed to medium-high and whip for another 2 to 3 minutes, until it is light and fluffy.
6. Using your favorite decorating tip, or an offset spatula, frost the cupcakes and decorate with sprinkles, if desired. Store the cupcakes in an airtight container.

Habitat
Last month I spent half the day with some of my coworkers working on the Beaverton site of Habitat for Humanity. It was a lot of fun and a lot of hard work. My arms were sore for several days, but it was so worth it.
Volunteering for Habitat for Humanity is always something I've wanted to do, and I am happy I had the opportunity with my work.
Here are a few photos a few of my coworkers took.
A few of the guys working on the second story of one of the houses we built.
We moved a lot of these and they are really heavy! They are the sub flooring boards... I think.
Another angle of doing the same thing, but in this one you get to see me rocking the tool belt and work gloves :)
Poor Gladys had to vacuum out underneath the floor we put in place, it's a good thing she's tiny! haha
Our fearless leader, his name is escaping me at the moment, but he was a good sport with all of us who didn't know a single thing about how to build a house.
Standing next to him is Nannette who put this day together for us. Thanks Nannette, we had a lot of fun!
Next time maybe it won't rain, but it certainly made it interesting trying to get all the mud off my clothes and shoes.

Love, Luck, Leap swap part 2
So for those of you who missed my earlier post, I did a swap with a lady in New York. You can read about it here.
She received her package from me, so I can now show you all about it.
I made "Jerry the musical monkey" by Rebecca Danger and while he was kinda a pain in the butt to make because he has a million pieces he is incredibly adorable!
SEE! Really cute. So cute in fact that I had a really hard time picking which photos to show you, so I just posted them all.
I'm not sorry :)

Ok, so that was my mini photo shoot. I received these photos from my swap partner of the whole package I sent to her.
All in all a really fun experience. I might wait a little while before I do another one though. It is fairly time consuming. We'll see.
